Dream Cookies

This is my absolute FAVORITE cookie recipe in the entire freaking world! And the best part is you can eat the dough raw because it doesnt have eggs or dairy. No more salmonella crap! I've modified this recipe a bit to make them taste more gooey and soft in the middle. If you add Enjoy Life chocolate chips to them they taste so yummy and delicious. This recipe makes about 1 dozen medium-large cookies.

Ingredients:

1/2 cup spelt flour
1/2 cup + 2 Tbsp white flour (organic, unbleached)
1/3 tsp pink salt (any salt to sub)
1 1/2 Tbsp freshly ground flax seeds
1 1/2 tsp baking powder

wet/melt:
1/2 cup + 2 Tbsp organic sugar (I used Florida Crystals)
2 tsp creamy peanut butter (optional)
1/2 cup + 2 tsp melted virgin coconut oil
2 Tbsp almond milk (can use other non-dairy milks)

add:
1/2 tsp apple cider vinegar
1/2 tsp real vanilla extract

fold in:
1/2 cup semi-sweet chocolate chips (vegan chips, dairy-free)

Directions:

 1. Grab a large mixing bowl and add the flour, salt and baking powder. 

2. Grind your flax seeds in a seed grinder or coffee grinder. Add them to the dry bowl.

3. In a medium bowl add the coconut oil, sugar, optional peanut butter and almond milk. (Make sure the almond milk and the coconut oil is warm in temperature. I dont like using the microwave so I use a pot filled about an inch with water and place whatever measuring cup Im using in the pot until its at a warm temperature. Its important to have the coconut oil and almond milk warm. If the oil is cold it will cause a cookie fail.)

4. Stir the sugar/oil mixture into the dry flour mixture. Stir well until you have a wet thick yet oily dough. Fold in the vanilla extract.

5. Fold in the ACV and chocolate chips. Its a good idea to have the chips already chilled.

6. Place the dough in the fridge and let it chill for about 15-20 minutes or until it feels dough-y enough to roll into a ball. While the cookies are chilling you can pre-heat the oven to 350 degrees.

8. Once the dough is placed on your cookie sheet (you can add cooking spray to it, but I usually don't) place them in the oven. Bake for 10-12 minutes or until the tops look slightly brown. Make sure you let them sit for a little bit. When you first take them out the will be very soft, but as they cool they will start to feel stiff and more like a cokie. I usually let them sit for atleast 10 minutes (Mostly becasue I can't even wait to eat them!)

9. And voila! You have yummy plant based cookies. You can store them in a container on the counter or in the fridge. Just know that if you store it in the fridge they will harden a bit more because of the coconut oil.

These were a huge crowd pleaser with my family. Including my boyfriend too! And let me tell ya, he's a picky fella.
